Though many consumers don’t know it, Alaska pollock is the most widely consumed fish in the world. The fish is an ingredient in over 1,000 products worldwide, and is consumed in the greatest quantities in Japan, Europe and North America. It is used extensively in quick-serve and casual restaurants, consumer ready meals, frozen breaded products and surimi seafood products. Alaska pollock should never be confused with Atlantic pollock, which is not related and has a higher fat content and a much stronger flavor.
